Chilli BBQ Slow Roast Pulled Pork

I am an unashamed fan of pulled pork so I was pretty excited to have a go at making it myself. It does require patience not in terms of the making but in terms of the waiting as its going to cook for at least 8 hours while teasing you with the smell....BUT it is well worth the wait :-)



Ingredients:

Approx 2kg Pork Shoulder 
Seasoning Mix (I used Salt, Pepper, Seasoned Pioneers' Mexican Adobo Spice Mix and a tablespoon of Dark Brown Sugar) You can choose something to your liking
2 Red Onions Roughly Chopped
3 Garlic Clove Chopped
5 Mild Chillies Sliced
800ml of Chicken Stock

1) Before you start prepping the pork add your chopped onions, garlic and a handful of chillies to the slow cooker, pour the stock over that, give it a stir and set on slow heat setting. Pop the lid on and leave it to start warming up.



2) Un-tie the pork shoulder and pat down any moisture with some kitchen paper (don't be tempted to cut of any fat as it there to enhance the flavour and texture) . Rub your chosen spice mix all over the pork getting that seasoning well worked into every inch of meat.




3) Place the pork fat side up (opposite way to the picture below!!) into the slow cooker and place the lid back on again.



4) This is where your patience will be tested. Leave the pork to slowly roast away for at least 7-8 hours. Try not to lift of the lid during this time as it will release heat and prolong the cooking time.



5) Once the time is up carefully remove the pork shoulder from the slow cooker onto a baking tray. Using a fork begin pulling the meat away (it should effortlessly pull off in shreds) and discard of any fat. 



6) You may find that you have practically a mountain of pulled pork thankfully it freezes well so I used about half of it on the nachos and the rest I put in the freezer for a later date. NB- The remaining stock I used in my Mushroom and Bacon Risotto the next day recipe for that click here.



7) If your adding BBQ sauce put your portion of pulled pork back into the slow cooker and mix in the BBQ sauce.



8) And that's it!! What you use the pork for is up to you, Pulled Pork Buns, Tacos...I used mine as a topping for Nachos with melted cheese and chillies :-) My friends loved it!!
