My Caribbean roots mean that cornmeal porridge has been a breakfast staple for me since I was probably taking my first steps.
Growing up I still love it and have played around with the traditional recipe to make it even more flavoursome. This is the way I like it but once you have cracked the base you can add any fruits, nuts, honey, granola that you like so its great for making it your own!
Ingredients
This Serves One Hungry Stomach or Two not so Hungry
4 Tablespoons of Coarse Cornmeal make sure its not the fine one
1/2 Pint of Milk (I'm a sucker for the full fat blue top but semi or skimmed will do)
1 whole Banana (mashed)
Handful of Blueberries (mashed)
2 Teaspoons of Demerara Sugar or to Taste
3 Sprinkles of Ground Nutmeg
1) Pour half of the milk into a saucepan, add nutmeg and bring to the boil on medium heat
2) While this is coming to the boil mix the cornmeal with the remaining milk in a mug (this is the tip for preventing lumps)
3) Once the milk is boiling pour the cornmeal/milk mix gradually into the saucepan while stiring continuously.
4) As this heats up the porridge will start to thicken (never stop stiring). Once it has thickened put it aside. Mash the banana and blueberries together and pour into the porridge.
5) Bring back onto the heat and mix the mashed fruits and porridge together until blended. If porridge is to thick add a splash of milk and stir.
6) Immediately serve in a bowl, top with blueberries and sliced banana.
This porridge will keep you full for the whole morning and it is a slow release energy food so much better than sugary cereals. Its super versatile and taste delicious! Hope you enjoy :-D
